Hearty Beet and Cashew Soup
This hearty warm soup provides the taste illusion of a cream of corn soup. The earthy flavor of the beets combined with the sweetness and nuttiness of cashews creates a delicious dish that can be enjoyed on its own or paired with a protein of your choice.
Not Corn Chowder, But It Should Be!
Finally, you can honestly say, "I didn't eat any corn," and yet still be satisfied with your corn cravings. Guaranteed!


Tools You Will Need:
Cutting Board
Sharp Knife
Food Peeler
Colander or Strainer
Micro Plane or Cheese Grater
Medium to Small Sauce Pan
Blender
Two Small Mixing Bowls for Garnish
I Can’t Believe It’s Not Corn Chowder
Golden Beets - 2 Cups, Peeled, Small Diced
(about 1 Extra Large Beet)
Cashews, Raw - 1 Cup (Unsalted Prefered)
Water - 2 ¼ Cups
Salt - 1 Teaspoon
Pepper - ½ Teaspoon
Garnish:
Pepper, Fresh - 1 Bell Pepper, Poblano or Jalapeño
Cilantro - 3 Tablespoons Finely Chopped
Citrus - A Squeeze (Lemon, Lime, Orange, Any)
Seeds, Toasted - 2 Tablespoons (Pepitas, Cashews, Any)
Oil - 2 Tablespoons (Avocado or Olive Oil)
Smoked Paprika- 1 Teaspoon
Pinch of Salt
Wash Beets with warm water and scrub off excess dirt, pat dry with towel. Use a Food Peeler to peel beet and carefully dice beet to about medium to small dice. Place diced beets in a saucepan with about 2 Cups of Water. Boil the beets for 5 minutes over high heat. Reduce to low heat and simmer beets for about 15 minutes until tender, add beats to a blender without liquid now add cashews to the saucepan and boil for 5 minutes until tender. Add Cashews and remaining lIquid to the blender. CAUTION: at low speed blend mixture together (CAUTION: if blender is at high speed blender will create heat pressure and explode). Please be very cautious when doing this. Start blender at low speed and gradually speed up to high speed and blend until smooth. Add Salt and Pepper to taste.
Chopped Fresh Pepper, Cilantro toss with citrus and a pinch of salt.
Mix Smoked Paprika with Oil and add a pinch of Salt.
